The Art of Distillation
The process begins with a 48-hour maceration and infusion, while fresh botanicals (lemon, thyme, basil) are distilled using the vapor infusion method, creating a lighter and more refined profile.
The flavored base is then transferred to a traditional copper still, which enhances purity and complexity in the final distillate. Distillation lasts 8-12 hours under low pressure, allowing the most delicate aromas to fully unfold.
Resting
This is followed by a 20-30 day resting period, during which the distillate is gently married with dilution water. At this stage, the aromatic intensities naturally harmonize, giving Keros Gin its refined and elegant character.
